Chicken Enchilada Casserole
Chicken Enchilada Casserole is an moderately easy dinner. Made with 12 corn tortillas, 2 (5 oz. each) cans chunk chicken, 1 can water, 1 can cream of chicken soup and 1 onion, diced and sauteed (optional), this recipe delivers authentic, satisfying flavors. In saucepan, place chicken, soup, water and onion.
In casserole or baking dish, place about 3 tablespoons meat-soup mixture.
Tear tortillas and place 1 layer over chicken mixture. Top with cheese.
Layer until all meat mixture is used.
Top with cheese and bake at 400Β° for about 30 minutes until heated through and cheese has melted.
