Line cookie sheet with foil.
Spray foil with nonstick cooking spray.
Sprinkle with cornmeal.
Spray medium nonstick skillet with cooking spray.
Heat over medium-high heat until hot.
Add chicken; cook and stir 5 minutes or until no longer pink.
