Cheesecake Tarts is an easy dinner. Made with 1 lb. cream cheese, 1/2 to 1 tsp. vanilla, 3/4 c. sugar and 2 eggs, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Line muffin tins with cupcake liners and put a vanilla wafer on bottom.
Beat cream cheese, vanilla and sugar together.
Add eggs, beating after each one.
Fill lined muffin tins to 1/2 full with mixture.
Bake at 350Β° for 15 minutes.
Cool and then put cherry/blueberry/strawberry pie filling on top.
Serves 20 to 24.
