Carolyn's Pancakes
Carolyn'S Pancakes is an easy dinner. Made with 2 c. flour (self-rising), 1 1/3 c. milk, 1/4 c. oil, melted butter or shortening, 2 tbsp. sugar and 2 eggs, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Put eggs and sugar in a 2-quart pitcher or mixing bowl and beat lightly with rotary beater.
Blend in milk and oil.
Add flour.
Blend together and beat until batter is nearly smooth.
Do not overbeat; small lumps will break up when fried.
Pour batter on hot griddle or frying pan (about 500Β°).
Turn when bubbles rise to surface in center.
