Canadian Cheese Soup
Canadian Cheese Soup is an impressive dinner. Made with 1 c. onion, finely chopped, 1 c. celery, finely chopped, 1 c. carrots, finely grated, 1/2 c. butter or oleo and 27 oz. chicken broth, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In large Dutch oven, saute onion, celery and carrots in butter over medium heat for 5 minutes.
Stir in chicken broth. Cover and simmer for 5 minutes.
Combine dry ingredients and seasonings; gradually mixture to vegetables and broth mixture.
Cover and simmer gently until thickened.
Cut cheese chunks.
Soup mixture. Heat over very low heat, stirring constantly just until cheese is melted.
