Cabbage Bean Soup
Cabbage Bean Soup is an moderately easy dinner. Made with 1 large onion, chopped, 2 carrots, 1 large stalk celery, 2 c. water and 2 c. chopped green cabbage, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Saute onion in a large nonstick pan (spray with Pam) for about 3 minutes.
Halve carrots and celery and then slice crosswise. Add to pan with onion, sauteing slowly over low heat for about 2 minutes.
Stir in water, cabbage and sugar.
Simmer, covered, 5 minutes.
Stir in tomatoes with juice and break up tomatoes. Simmer, covered, for 20 minutes.
Add beans and simmer, uncovered, 5 minutes until heated through.
Only 1 gram fat per serving.
