Black Bean Soup
Black Bean Soup is an moderately easy soup you can prepare in just 54 minutes. Made with c. sliced leeks, c. oil, garlic, peeled and crushed, (1 lb.) cans black beans and c. water, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Saute the leeks in the oil in a large saucepan until golden. Add garlic and 1 can of beans with their liquid.
Mash up the beans with a fork.
Add the second can of beans with their liquid, but do not mash the beans.
Stir in the water, salt and pepper and simmer, covered, for 40 minutes, stirring occasionally.
Serve hot.
