Black Bean Soup
Black Bean Soup is an moderately easy soup you can prepare in just 54 minutes. Made with c. dry black beans, - 14 oz cans beef broth, garlic, c. diced celery and c. diced carrots, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Rinse beans. Put them in a bowl with salt and cover with water. Soak over night. In morning, drain and rinse well.
Place broth, beans and garlic in soup kettle and boil.
Cover and simmer for about 3 1/2 hours. Add remaining ingredients and simmer for 1 more hour. Season to taste.
Remove ham from hocks before serving. Makes about 4 qts.
