Black Bean Soup 2
Black Bean Soup 2 is an moderately easy dinner. Made with 2 c. black beans, 3 qt. water, 1/4 lb. salt pork, 1/2 lb. lean beef, cut in small pieces and 1 carrot, diced, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Wash and clean beans; soak overnight.
In morning, sort beans carefully and put in stock pot with 3 quarts water.
Add salt pork, beef, carrot, onions, cloves, mace and red pepper.
Cover and cook slowly 3 hours or until beans are very soft.
Rub through sieve.
Place hot bean liquid and puree in a tureen.
Add egg slices, lemon slices and sherry.
