Beef Barley Soup
Beef Barley Soup is an moderately easy dinner. Made with 3 to 4 pieces short ribs of beef, 1 large can campbell's tomato juice, 2 carrots, minced, 2 stalks celery, diced or minced and 1 medium onion, minced, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Put short ribs in soup pot.
Cover ribs with water.
Bring to boil (do not skim top).
Reduce heat and add remaining ingredients.
Cover with lid and simmer 2 1/2 to 3 hours.
Cook barley separately.
Drain. Cool, then add to soup.
