Banana-Nut Muffins
Banana-Nut Muffins is an moderately easy dinner. Made with 1 stick margarine, 1 c. sugar, 2 large eggs, 2 large ripe bananas, mashed and 2 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 400Β°.
Grease a 12-cup muffin pan or use paper liners.
Beat together softened margarine and sugar at medium speed until light and fluffy.
Add eggs, one at a time, beating well after each addition.
Beat in bananas until smooth.
Mix together flour, salt, baking powder and soda.
Alternately stir in flour mixture and buttermilk into egg mixture until dry ingredients are just moistened.
Stir in nuts and vanilla; do not overmix. Fill cups 2/3 full.
Bake 15 to 18 minutes.
