Avocado Orange Salad
Avocado Orange Salad is an moderately easy dinner. Made with 2 medium ripe avocados, 1 medium red onion, thinly sliced, 1/2 c. vegetable oil, 3 tbsp. lemon juice and 3 tbsp. scotch, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Peel and stone avocados; cut into cubes.
Combine avocados and onion in a medium size bowl.
Toss gently to mix well.
In a small bowl combine oil, lemon juice, scotch, sugar, salt and pepper; mix well.
Pour over avocado mixture.
Cover and refrigerate at least 2 hours, stirring occasionally.
To serve, place orange sections on lettuce, pile on avocado mixture in center.
Makes 6 servings.
