Apricot Jello Salad
Apricot Jello Salad is an impressive dinner. Made with 2 pkg. apricot (or orange or 1 of each) jell-o (small), 2 c. hot water, 2 c. cold water, 1 (no. 2) can crushed pineapple, drain and save juice and 2 c. miniature marshmallows, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Dissolve Jell-O in hot water, then add cold water.
Let thicken; fold in pineapple, bananas and marshmallows.
Mix together beaten egg, sugar, flour and pineapple juice.
Cook until thick.
Add cream cheese and stir until smooth.
Let cool, then fold cream cheese mixture into whipped topping.
Spread over Jell-O.
Top with coconut.
