Amish Broccoli Cheese Soup
Amish Broccoli Cheese Soup is an moderately easy dinner. Made with 1/2 stick (1/4 c.) margarine, 1 c. diced onion, 1 garlic clove, mashed or garlic powder, 1 (20 oz.) pkg. chopped frozen broccoli and 1/4 c. flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Melt margarine in large saucepan/Dutch oven.
Add onion and garlic or garlic powder and cook until tender.
Add broccoli and mix well.
Sprinkle with flour and cook, stirring frequently, several minutes.
Blend in chicken broth and bring to a simmer. Break linguine into short lengths and add.
Cover and cook 10 to 15 minutes on very low heat until noodles are tender, stirring frequently.
Stir in milk and pepper.
Simmer about 5 minutes.
Add cheese.
Turn off heat.
Let stand a few minutes and stir well before serving.
Makes 8 to 10 servings.
