Ada's Vegetable Chili
Ada'S Vegetable Chili is an moderately easy dinner. Made with 3 lbs. ground beef, 2 lbs. kidney beans, 2 cans tomato soup, 2 cans water and 2 cups celery, diced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In a 5 qt. pot combine celery, carrots, beans and soup.
Fill soup cans with water and add to pot.
Cook over low heat.
In a large skillet, brown beef, stirring frequently to keep in small pieces.
Add salt and pepper to taste.
Empty skillet into pot. In same skillet, brown peppers and onions. Add to pot.
Simmer pot over low heat, stirring occasionally at least 4 hrs.
The longer the better. 1 hr. before serving, add diced potatoes and cook until tender.
