Zucchini Casserole
Zucchini Casserole is an moderately easy dinner. Made with 1/2 c. butter, melted, 1 (8 oz.) pkg. pepperidge farm stuffing mix, 4 medium zucchini, thinly sliced, 2 carrots, shredded and 1 medium onion, grated, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Preheat oven to 350Β°.
Melt butter in frying pan; stir in all of the stuffing mix.
Set aside 1/2 cup buttered stuffing mix. Combine remaining stuffing mix with all other ingredients. Smooth into buttered casserole; top with reserved 1/2 cup stuffing mix.
Bake, uncovered, for 25 minutes, or until browned.
Can be assembled ahead.
Serves 6 to 8.
