Zucchini-Carrot Bread
Zucchini-Carrot Bread is an impressive baked good you can prepare in about 1 hour 26 minutes. Made with eggs, c. salad oil, c. brown sugar, packed, c. white sugar and c. carrots, grated medium, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Preheat oven to 350Β°.
Grease pans (three 5 1/2 x 9 1/2 x 3-inch if double).
In large bowl, beat eggs with oil.
Stir in sugar, zucchini, carrots and vanilla.
Mix flour, baking soda, baking powder, salt and cinnamon.
Blend into egg and oil, etc. and add raisins.
Bake 1 hour or until tested with toothpick. Remove from pan and cool.
