White Christmas Fudge is an moderately easy dinner. Made with 2 c. sugar, 2/3 c. milk, 1/4 c. butter or margarine, 12 oz. white chocolate, coarsely chopped and 1/2 tsp. almond extract (optional), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Line 8-inch square pan with foil, then grease foil.
Mix sugar and milk in 3-quart saucepan.
Over medium heat, add butter and bring to boil, stirring constantly.
Boil for another 5 minutes without stirring.
On low heat, add chocolate and almond extract.
Stir, then whisk until chocolate melts and mixture is smooth.
Stir in dried cherries (or cranberries or apricots) and toasted almonds.
Pour mixture into prepared pan.
Refrigerate 2 hours until firm.
Invert pan; peel off foil and cut into 1-inch squares.
