Vegetable Pilaf
Vegetable Pilaf is an moderately easy dinner. Made with 1 1/3 c. water, 1 tsp. chicken soup base (or bouillon), 1/2 c. long grain rice (uncooked), 1 1/2 c. sliced mushrooms and 1 1/2 c. shredded carrots, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine 1 1/3 cups water and soup base.
Add rice; cover and reduce heat.
Simmer 20 minutes or until liquid is absorbed.
Add mushrooms, carrot, water, parsley, onion and pepper to rice.
Cover and cook over low heat 5 minutes.
Makes 4 servings.
