Tropical Fruit Salsa is an impressive dinner. Made with 1 lb sweet onion, 2 tsp olive oil (extra virgin), 1 ripe mango (peeled, seeded, and cut into 1/4 inch dice), 1 ripe papaya (peeled, seeded, and cut into 1/4 inch dice) and 1/4 pineapple (peeled, cored and cut into 1/4 inch dice), this recipe delivers authentic, satisfying flavors. Heat oven to 400 degrees.
Halve onion, brush cut sides with olive oil.
Cook cut side down in a roasting pan until caramelized. 1 hour 20 minutes.
Turn onions over let cool.
Peel onions and cut into 1/4 inch dice.
Combine onions with the remaining ingredients toss well.
