Taco Meat Loaf
Taco Meat Loaf is an moderately easy dinner. Made with 1 c. crushed saltines (about 30 crackers), 1 envelope taco seasoning mix, 1/2 c. ketchup, 1 c. mushroom stems and pieces; drained and 1 can sliced ripe olives, drained, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
In a bowl, combine first eight ingredients.
Add beef; mix well.
Press into a greased 9 x 5 x 3 inch loaf pan.
Bake uncovered, at 350° for 1 to 1-1/2 hours or until meat thermometer read 160°.
Serve with salsa, sour cream, cheese, and additional olives if desired.
