Sunday Brunch is an moderately easy dinner. Made with 1 doz. eggs, 1 onion, chopped, 3 tbsp. butter, 4 to 6 medium potatoes, diced and 1 lb. sausage, browned and crumbled, or bacon or ham, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Brown onion in butter.
Add potatoes to onion; cook until tender.
Layer, in greased 9 x 13-inch pan, potatoes, onion and meat.
Mix eggs as if you were going to scramble them.
Pour over mixture.
Bake, uncovered, in a 300Β° oven for 30 minutes.
Stir every 5 to 10 minutes so it cooks evenly.
Top with cheese the last 5 minutes.
