Squirrel Jambalaya
Squirrel Jambalaya is an easy dinner. Made with 2 squirrels, chopped onion to taste, chopped celery to taste, chopped bell pepper to taste and 3/4 to 1 c. rice, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Brown squirrels in iron pot.
When brown, pour off grease and add chopped onion, celery and bell peppers; then saute.
Cover with water and cook until tender.
Then add rice to squirrel and gravy. Gravy should be 2 to 2 1/2 cups liquid.
Cover and cook on low heat about 1/2 hour until rice is done.
Stir once or twice.
