Spanish Rice
Spanish Rice is an moderately easy Spanish dinner you can prepare in about 1 hour 18 minutes. Made with c. rice, c. chopped onion, large bell pepper, chopped, garlic, chopped and cilantro to taste, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Brown the rice with the margarine.
When it is as brown as you like it, add the onion, bell pepper, garlic and cilantro.
Also add salt and pepper to taste.
Continue to stir until the onion becomes clear looking.
Add the tomatoes; stir.
Cover; let simmer until rice is done.
You may want to add water, also.
Just don't add too much; otherwise, you will lose the flavor and it will be flat. Continue to watch it so it does not scorch.
