Spanish Fried Rice
Spanish Fried Rice is an moderately easy dinner. Made with 1 1/2 c. uncooked long grain rice, 1 tbsp. shortening, melted, 1 c. chopped tomato, 1/4 c. chopped onion and 1/4 c. chopped green pepper, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Saute rice in shortening in a large saucepan over medium heat until rice is lightly browned.
Add tomato, onion and green pepper to rice mixture and saute until vegetables are tender.
Stir chicken broth, minced garlic, salt, cumin seed and pepper into vegetable mixture.
Bring to a boil; cover, reduce heat and simmer 25 minutes or until rice is tender and liquid is absorbed.
Serves 8 to 10.
