Spanish Fried Rice
Spanish Fried Rice is an moderately easy Chinese dinner you can prepare in about 1 hour 6 minutes. Made with c. long grain rice, c. hot water, bacon, condensed beef broth and (8 oz.) can seasoned tomato sauce, this recipe delivers authentic, satisfying flavors. Soak rice in hot water for 1/2 hour; drain well.
Spread in big shallow pan to dry a little, about 1 hour.
Cook bacon until crisp; crumble and set aside.
Add rice to drippings and cook until rice is lightly browned.
Add crumbled bacon, beef broth, tomato sauce, green pepper, onion, garlic and cumin seed.
Cover; cook over low heat, stirring now and then, until rice is done and liquid absorbed, about 30 minutes (add extra water if needed).
