Soy Waffles
Soy Waffles is an easy dinner. Made with 1 c. soaked legumes (soy beans, pinto beans), 1 1/4 c. rolled oats (quick cooking), 2 c. water, 2 tbsp. oil (optional) and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Soak legumes 24 hours.
(A quantity of beans may be soaked, drained and frozen ahead of time.)
Combine all ingredients in blender.
Blend until very fine and light.
Bake 7 or 8 minutes on hot, sprayed waffle iron.
Serve with pureed fresh, frozen or canned fruit, sweetened as desired.
