Sour Cream Potato Soup
Sour Cream Potato Soup is an moderately easy dinner. Made with 12 slices bacon, 12 leeks or 20 green onions, 1/2 c. onions, 1/4 c. flour and 2 c. sour cream, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Saute bacon until crisp.
Add onions and leeks, saute until cooked.
Add flour and cook until thickened.
Slowly stir in bouillon.
Add potatoes.
Cook until potatoes are still a little hard (about 1 hour).
Stir frequently.
Combine sour cream and egg yolks.
Stir some of the soup into the mixture and then add to soup.
Makes 4 quarts.
