Seafood Kabobs
Seafood Kabobs is an moderately easy dinner. Made with 1 to 2 red peppers, depending on size, 1 to 2 green peppers, depending on size, 1 large onion, 2 tomatoes and 2 swordfish steaks, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cut all vegetables into 2-inch chunks.
Peel and devein shrimp. Cut swordfish into 2-inch chunks.
Alternate vegetables and fish on 4 skewers.
Marinate in olive oil, garlic and fresh parsley for 1 hour.
Broil for 10 minutes.
Remove skewers, keeping shape.
Serve over Saffron Rice.
