Sausage Jambalaya
Sausage Jambalaya is an moderately easy dinner. Made with 1 lb. smoked sausage (hot and mild may be combined), 2 medium onions, diced, 1/2 medium green pepper, diced, 1 tbsp. worcestershire sauce and 1/2 tbsp. garlic salt (2 toes of diced garlic), this recipe delivers authentic, satisfying flavors. Cut sausage into 1/2-inch slices and brown in heavy 3-quart saucepan or Dutch oven. Add diced onions and green peppers. Saute until onion is clear. Add remaining spices and stir well. Add the hot water and bring to a boil. Add the uncooked rice and stir once to mix ingredients. Cover and cook over a low heat for 20 to 25 minutes until rice is tender and fluffy. (If mild sausage only is used, add a dash of Louisiana hot sauce or 1/4 teaspoon red pepper.) Serve with a green salad and favorite beverage.
