Salmon Pasta Salad
Salmon Pasta Salad is an impressive pasta dish you can prepare in about 1 hour 28 minutes. Made with (8 oz.) pkg. spiral pasta, cooked and drained, c. fully cooked salmon chunks or 1 (14 3/4 oz.) can pink salmon, rinsed, boned and skin removed, c. quartered cherry tomatoes, medium cucumber, quartered and sliced and small red onion, sliced, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In a large bowl, toss the pasta, salmon, tomatoes, cucumber and onion.
For dressing, combine the oil, lemon or lime juice, dill, garlic, salt and pepper.
Mix well.
Pour over pasta.
Cover and chill.
Serve over lettuce.
Yield: to 8 servings.
