Roasted Pepper Pasta
Roasted Pepper Pasta is an impressive pasta dish you can prepare in about 1 hour 34 minutes. Made with . penne noodles, red pepper, yellow pepper, green peppers and olive oil, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cook noodles as directed
Slice peppers in 1/2 and hollow out inside
Place hollow side down on a cookie sheet
Wipe olive oil on the outside of peppers and sprinkle with kosher salt
Broil until peppers turn black (approximately 15 minutes)
Wipe skin off with a paper towel and thinly slice
In a pan, add diced onion, diced tomatoes, garlic and fennel seed
Add peppers and toss with cooked pasta and fresh basil
Serve with Parmesan cheese.
