Roast Beef Quesadillas
Roast Beef Quesadillas is an moderately easy dinner. Made with 6 oz. deli roast beef, thinly sliced, 1 small onion, thinly sliced, 1/4 c. green bell pepper, chopped, 1/2 c. prepared medium salsa, divided and 3/4 c. colby-jack cheese, shredded, this recipe delivers authentic, satisfying flavors. Place onion and bell pepper in small microwave-safe bowl.
Cover and microwave at High 3 to 4 minutes, stirring halfway through cooking time.
Stir in 3 tablespoons salsa; reserve.
