Rice Pilaf
Rice Pilaf is an moderately easy dinner. Made with 3/4 c. chopped onion, 1/2 c. chopped celery, 1/2 c. chopped fresh mushrooms (optional), 1 c. water and 1/2 c. uncooked lentils, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Coat a saucepan with vegetable cooking spray; place over medium heat until hot.
Add onion and next 2 ingredients; saute 3 minutes until tender.
Add water and next 3 ingredients.
Bring to boil; cook 2 minutes.
Cover and reduce heat; simmer 20 minutes. Add rice and simmer for 20 more minutes, or until rice is done and lentils are tender.
Stir well.
Serves 4.
