Rice Pilaf
Rice Pilaf is an moderately easy dinner. Made with 1/2 lb. mushrooms, diced, 1 tbsp. fresh chopped parsley, 1 small onion, diced, 1 lb. long grain rice (half cooked) and 6 tbsp. oil, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute mushrooms, parsley, onion, and cooked rice in oil.
Put into a 3-pint casserole dish with broth and seasonings and cover. Bake at 350Β° (gas 4) for 45 minutes or until the rice is tender and liquid is absorbed.
