Quick Spicy Shrimp Cocktail
Quick Spicy Shrimp Cocktail is an moderately easy dinner. Made with 12 oz. beer, 1 tbsp. old bay seasoning mix, 1 lb. large shrimp, shelled and deveined, 8 oz. soft tofu and 1/4 c. plus 2 tbsp. salsa (mild, medium or hot), this recipe delivers authentic, satisfying flavors. In a large saucepan, bring beer and seasoning to a boil.
Add shrimp. Reduce heat to low.
Cover and simmer 3 to 4 minutes, stirring occasionally, until shrimp are opaque.
Remove shrimp with slotted spoon to a 9 x 9-inch metal pan.
Add 1 cup beer mixture. Cover with plastic wrap and place in freezer 5 minutes to cool.
