Made with 8 low fat flour tortillas, 1 jar (7 oz.) roasted red peppers, drained and thinly sliced, 2 small green onions, thinly sliced, 1/4 c. shredded monterey jack cheese, with or without jalapeno chilis and 3/4 c. fresh cilantro, this recipe delivers authentic, satisfying flavors. Preheat oven to 400Β°. Place 4 tortillas on large cookie sheet. Top each tortilla with 1/4 of the roasted red peppers, green onions, cheese and cilantro; top with remaining tortillas.
