Quesadillas
Quesadillas is an moderately easy dinner. Made with 8 (6-inch) flour tortillas, 1 c. (4 oz.) shredded cheddar cheese, 1 c. (4 oz.) shredded monterey jack cheese, 1 medium tomato, chopped and 1/4 c. chopped green onion, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Heat tortillas, one at a time, in ungreased hot skillet until softened, about 30 seconds.
(Cover hot tortillas to prevent drying.)
Sprinkle 2 tablespoons each Cheddar and Monterey Jack cheese over half of each tortilla.
Sprinkle with tomato, green onion, chilies and salt and top with taco sauce.
Moisten edge of tortilla with water.
Fold tortilla over filling.
Pinch to seal. Secure with wooden picks.
Heat shortening (1/4-inch) until hot. Fry tortillas until golden brown, about 4 minutes.
Drain on paper towels.
Remove wooden toothpicks.
Makes 8 servings.
