Potato Salad
Potato Salad is an moderately easy dinner. Made with 8 medium red potatoes, cubed, 4 or 5 boiled eggs, chopped, 1 small onion, chopped finely, sweet pickle, chopped and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cover potatoes with water and bring to a boil.
Cook until tender, about 15 to 30 minutes.
Drain and cool.
Add eggs, salt, pepper, onion and sweet pickle.
I usually sprinkle Mrs.
Dash over this.
Combine remaining ingredients.
Pour over potato mixture and toss to coat.
Refrigerate 6 hours or overnight.
