Pigs in the Blanket(Hamburger)
Pigs In The Blanket(Hamburger) is an moderately easy dinner. Made with 1 head cabbage, 1 1/2 lb. ground beef, 3/4 c. rice (uncooked), 2 eggs, beaten and 1 medium onion, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Place cabbage in pot; pour boiling water over cabbage and cook 10 minutes, boiling.
Turn cabbage to cook 5 additional minutes. Don't overcook.
Remove leaves.
Mix ground beef, rice, eggs, chopped onion and 1/2 cup of tomato sauce with salt and pepper to season.
Put 2 teaspoons of mixture on leaf.
Roll up and secure with toothpicks.
Place rack in bottom of a large pot; spread extra leaves on rack.
Fill 3/4 full of tomatoes and put in pigs. Cook on high until boiling, then medium for 1 hour and low for remaining time.
Total cooking time is 2 1/2 hours.
