Pierogi(Traditional Polish Christmas Eve Dish) is an moderately easy dinner. Made with 1 small potato, cooked and mashed, 2 c. flour, 2 tbsp. butter, 1/2 c. warm water and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Sift flour and salt in a bowl.
Add butter, mashed potato, egg and warm water.
Mix together and knead on floured board until smooth and satiny.
Divide dough and roll about 1/4-inch thick on floured board.
Cut with donut cutter (I use a glass dipped in flour as my grandmother did).
Press a teaspoon-sized dab of filling into dough, fold in half and press edges tightly.
Boil in water until they rise to the surface.
Top with finely rolled soda cracker crumbs and melted butter.
