Pecan Coffee Cake
Pecan Coffee Cake is an moderately easy dinner. Made with 2 c. brown sugar, 2 c. flour, 1/2 c. shortening (butter and crisco or margarine), 1 c. buttermilk and 1 tsp. soda, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Mix sugar, flour and shortening together as you would pie crust.
Take out 1/2 cup mixture; save for topping.
To the remainder, add the buttermilk and teaspoon of soda which has been dissolved in a tablespoon of warm water, vanilla, salt and egg. Beat together.
Turn into buttered pan approximately 9 1/2 inches square.
Sprinkle over top the 1/2 cup of crumbs and 1/2 cup chopped pecans.
Bake at 400Β° for 45 minutes.
Best served slightly warm.
