Oven Fried Eggplant
Oven Fried Eggplant is an easy dinner. Made with 1 medium eggplant, 1/2 c. milk, flour, margarine or butter and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Pare and slice eggplant into 1/2-inch slices.
Salt and pepper to taste, if desired.
(Salt may be omitted for low salt diet.) Dip in milk, then roll in flour.
Place on baking sheet and bake in 375Β° oven until crisp, turning once.
Remove from oven and spread margarine on each slice while still hot, if desired.
