Mock Soufflé(Chicken Casserole)
Mock Soufflé(Chicken Casserole) is an moderately easy dinner. Made with 8 slices cubed day old bread (buttered), 2 c. chicken, boiled and chopped, 1/2 c. chopped onion, 1/2 c. chopped celery and 1/2 c. mayonnaise, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Cut bread in cubes.
Save buttered cubes for top of casserole. Place half the plain bread cubes in bottom of casserole.
Mix chicken, onion, celery, mayonnaise, salt and pepper; spread this on top of bread layer.
Cover with other half of bread cubes. Beat eggs and milk; pour over the bread cubes.
(Here the mixture may be chilled for later completion.)
Add soup.
Cover with buttered bread cubes.
Add the grated cheese the last few minutes of cooking.
Bake at 325° for 50 minutes (350° if the dish is deep).
