Miso Soup
Miso Soup is an moderately easy dinner. Made with 1/2 c. dried shrimp, 5 c. water, 3/4 c. miso, 1/2 cube tofu and 3/8 c. green onion, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cook shrimp in water for 10 minutes.
Bring water to a boil and let simmer.
Put miso in strainer (over a pot) and pour shrimp water through until all miso is dissolved.
Cut tofu into 1/2-inch cubes and add to stock.
Bring to a boil.
Remove from fire and add finely chopped green onions.
Saimin noodles may also be added at the same time as the tofu for a heavier soup.
