Microwave Potato Casserole(Club Member: Ben Steadman) - a delicious recipe with 6 ingredients.

Peel and slice or dice potatoes
In large bowl, mix potatoes, onion, bell pepper and mushrooms
Pour half of mixture in large casserole; dot with 1/2 of butter
Add rest of potato mixture; dot with remaining butter
Salt and pepper mixture; cover
Cook in microwave on High for 15 to 20 minutes
Stir; recover and cook for 15 to 20 more minutes
Serves 6 to 8.
