Microwave Chocolate Oatmeal Muffins
Microwave Chocolate Oatmeal Muffins is an moderately easy dinner. Made with 1 c. flour, 2/3 c. quick oats (uncooked), 6 tbsp. sugar, divided, 1 tsp. baking powder and 1/2 tsp. baking soda, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In large bowl, combine flour, oats, sugar (3 tablespoons), baking powder, baking soda, cinnamon and salt.
Add chocolate chips.
In small bowl, combine eggs, oil, applesauce and vanilla and mix remaining sugar until well blended.
Add to flour mixture and stir until dry ingredients are just moistened.
Spoon into paper lined microwave-safe pans, filling each about 2/3 full. Microwave on High power for 2 to 3 minutes.
Sprinkle with confectioners sugar.
