Mala's Chicken Salad
Mala'S Chicken Salad is an moderately easy dinner. Made with 4 boneless, skinless chicken breasts, 1 small onion, quartered, 1 bunch green onions, 1 c. chopped pecans or almond slivers and 1 orange, quartered, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Boil chicken breasts with quartered orange and quartered onion. Salt and pepper water to taste.
Meanwhile, chop green onions. Drain oranges and combine in bowl with nuts and mayo.
(Begin with 1/2 cup; add more when chicken is added.)
Remove chicken.
Cool and chop into bite-sized pieces.
Add to mayo mixture.
Chill for several hours or overnight.
Serve with crackers.
