Lindsay's Chicken Quesadillas
Lindsay'S Chicken Quesadillas is an easy dinner. Made with 2 boneless skinless chicken breasts, cut in small pieces, 1 can ro-tel mexican fiesta tomatoes, 4 (10-inch) flour tortilla shells and 1 c. shredded monterey jack cheese, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Cook chicken and tomatoes in Pam until liquid cooks out.
In another frying pan on medium to low heat, spray Pam.
Lay tortilla shell in pan and add chicken mixture on one side of shell.
Sprinkle cheese on top of chicken.
With spatula, fold over other side on top of chicken and cheese.
Flip tortilla shell and brown on other side.
Serve with salsa and sour cream.
