Lemon-Roasted Duck
Lemon-Roasted Duck is an easy dinner. Made with 4 mallards, salt and pepper, 1 stick butter and juice and rind of 2 lemons, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Wash the ducks inside and out and dry completely.
Salt and pepper.
Melt butter in roasting pan; brown ducks on all sides on top of stove.
Pour lemon juice in cavities of ducks and put rinds around sides.
Cook, covered, in 300Β° oven until tender.
Remove meat from bones and pour gravy in pan over meat.
Serves 6.
